This is a Maranao version of a savory spice blend used down south. Most of us know how difficult it is to find local shelf-stable products that are not sweet or sour in the Philippines. We discovered palapa through a friend several years ago and our world changed! Great on rice, in soups, over eggs... The list goes on.
Maranao palapa contains native scallions (sibujing), ginger, chili, salt, grated coconut, and coconut oil. One is “wet” (uncooked, spicier), and another is dry (cooked and coconutty).
