Sometimes terribly common things like black pepper get ignored, their importance overlooked over less common ingredients. The black pepper we buy at the groceries is often stale, sometimes moldy. It's only when you smell and taste some that are properly cared for that you realize what you are missing in terms of bite and fragrance.
