ADLAI (MISAMIS OCCIDENTAL)
Adlai (Coix lacryma) or Job's tears is a traditional grain grown in parts of Mindanao and the Visayas. Once a common grain among some upland farming communities, it is slowly regaining popularity as an alternative to rice. This is from an organic farm in Tunggo, Misamis Occidental.
It is gluten-free, more filling than white rice, and has a low glycemic index. Farmers report that it grows well in poor soil and doesn’t need much water or chemical input. This makes it a more resilient crop in the face of climate change.
Cook it like rice. The texture is slightly chewy, and the flavor is nutty, as the grain has more integrity in structure than most rice. It works well in soups, fried rice, salads, or on its own.
