A clean-tasting salt, slightly briny. Good for everyday use, but still delicate enough for finishing. Dried on traditional clay beds, as is usual in the more gently sloping coastlines of the country. Irasan or salt beds lined with clay, are irrigated with seawater and evaporated until the salt is concentrated.
