This nipa lambanog from Infanta, Quezon, is a strong distilled liquor made from the fermented sap of the nipa palm, locally called sasa. The sap is collected and fermented in a boozy beverage called tuba. It is then distilled into a clear, potent alcoholic beverage like vodka. This clear spirit typically contains 40–45% alcohol.
