PALAPA NA MAGUINDANAON (MAGUINDANAO)
A seasoning that deserves to be discovered !not be confused with the scallion-based Maranao Palapa. This seasoning is used in Maguindano to flavor meals, coconutty, spicy, and savory. It can be sprinkled over rice, soup, or any dish to add a different dimension or savory, interesting accent. Sometimes we think it almost taste like bacon bits, though it is vegan! Contains coconut meat, lengkuas (galangal), garlic, siling labuyo (local chili), and salt.
