The solid, traditional “candy” form of mascobado sugar, which is an unrefined cane sugar with a rich, molasses flavor and aroma that complements coffee and cacao. It is excellent for baking, coconut-milk-based dishes, and in marinades and sauces, and is high in iron, potassium, and calcium. These rocks are produced by a cooperative using organic cane sourced from all over Negros Occidental.
